What to do with your leftover Thanksgiving Turkey

Here is a simple meal that can be made with leftover turkey or chicken. It is almost Thanksgiving, which will probably mean leftover turkey. I will be making this with some of my leftover turkey later this month, for sure. ?

Ingredients:

  • leftover chicken or turkey
  • tomatoes
  • garlic
  • onion
  • jalapeño
  • cooking oil
  • salt
  • tortillas

  • Step 1 – Try to clean as much of the turkey or chicken from the bones as possible. Use your fingers to shred it as you go. I ended up with 4 cups of shredded chicken. You can make this with more or less. It is one of those “use what you have” recipes.dsc01524
  • Step 2 – Prep the vegetables. 1/2 cup sliced onion, 1 clove garlic minced, 1 cup of diced tomatoes, 1/2 to 1 whole jalapeño diced or minced. (I actually didn’t have a jalapeño pepper on hand when I made this, so I used 1/3 of a serrano pepper. I used less of the serrano because they are usually a little spicier than jalapeños.) You may want to used more or less vegetables, depending on how much turkey or chicken you are using.dsc01527
  • Step 3 – Fry the onion, garlic and jalapeño in hot cooking oil. I used 2 tablespoons of oil, but I ended up adding a little more before I added turkey/chicken. Fry until tender, usually just a few minutes.
  • Step 4 – Add the turkey or chicken. Season with salt, garlic or onion powder or both if you like. I have also used a black pepper/garlic powder mix. Fry for a few minutes longer. Remember, the turkey/chicken has already been cooked once. So it is really just about moistening the turkey/chicken and letting the flavors blend in.dsc01528
  • Step 5 – Add the tomatoes and continue to stir fry for a few more minutes.dsc01534

  • We always eat this with warmed tortillas. Both corn or flour tortillas go well with this meal. I added a side of refried beans and a sprinkling of cotija cheese.
