Here is a delicious recipe for Chicken Flautas with Guacamole. This recipe serves 3-4. It is a prefect lunch for my husband, my son and I. When all the kids are home from school and I make this for dinner, I double the recipe.
Ingredients:
- 2 or 3 tablespoons of fresh cilantro, chopped
- 1/4 cup of fresh chopped onion
- 1 or 2 fresh tomatoes, diced
- 1 avocado
- 1 lime; for a squeeze of lime juice
- salt
- 1.5 chicken breasts, chopped (leftover chicken works too; shredded or cut up)
- cooking oil
- 1/2 or 1 tsp of chili powder
- 1/4 cup of sour cream
- 16 corn tortillas
- 1/4 cup cotija cheese
- refried beans
- salsa of your choice
Step 1
Start your vegetable prep! Chop cilantro, onion and tomato (keep separated). For guacamole, put the flesh of the avocado in a small bowl. Smash it with a fork or spoon. Add a sprinkling of salt and lime juice, set aside.
Step 2
Dice chicken into bite size pieces.
Heat oil in a non-stick skillet.
Cook chicken.
Salt to taste.
When chicken begins to turn a golden brown color, add the 1/4 cup of fresh chopped onion.
Tip: While the chicken cooks, I usually break it into smaller pieces with the spatula.
Step 3
When chicken is done cooking, transfer to a bowl. Save remaining oil in the pan for later use.
Mix the chili powder, cilantro, sour cream & cotija cheese with the chicken.
Step 4
Time to fill your flautas!
Tip: Before filling the tortillas, I microwave a stack of them for 2 minutes. This helps them become soft and makes them movable. That way they won’t break on you when you are rolling the tortillas.
Overlap two tortillas like in the above picture. Spoon some of the chicken filling along the center (from left to right). Roll up tightly with the seam side down. You may use a tooth pick to keep you flautas closed, if needed.
Step 5
Add more oil to the pan and heat over medium heat. Add flautas seam side down to the hot oil. I usually fry two at a time. Use two forks to turn the flautas over. You may replace tooth picks to help flautas stay together once the seam side is up, if needed.
Place the fried flautas on a paper towel, to allow any of the excess foil to drain off.
Serve with sides of refried beans, guacamole, tomatoes & salsa of your choice. If you have any left over onion and cilantro, these make good sides as well.
Drizzle sour cream over the flautas and sprinkle cotija cheese over the flautas and the refried beans. Enjoy!!!
