Early Monday evening while Carlos and the kids were all over at the soccer field, I was trying to put together a quick treat for family home evening. In my meal planner, I had planned to bake a yellow cake from scratch. Sometimes things do go as planned, and baking a cake was not going to be happening that day. I had some ice cream in the freezer, which when we have it is the easiest no prep family home evening treat ever, but that is what we had the Monday before. So, I kept thinking and I thought, “well, I have the cake frosting that i had already bought at the store for the cake….what can I do with this frosting?” I looked in the cupboards, and pulled out a box of vanilla wafers. Bingo! We have put whip cream on vanilla wafers, why not put frosting on them?
So, this became our family home evening treat that night. I spread frosting on the bottom of one wafer and topped it with another wafer. Then I squeezed them together a little bit so that the frosting would stick out a little. For the finishing touch I rolled them star-shaped sprinkles. Ta-da! Pretty quick treat, right? I ended up having some extra time, so I tried using some of the strawberry ice cream that I had in the freezer, and that worked too! I placed an open Tupperware in the freezer and after I made up each one, I would individually put them in the freezer so that the ice cream would not start to melt and make the wafers soggy. Then I put the lid on the Tupperware when I was done and the treats waited in the freezer until everyone came home.
These super easy treats turned out to be a hit with my family. 😉 This recipe is also simple enough to make it a fun kid’s recipe.

1 box of vanilla wafers
1 can of frosting or 1 pint of ice cream
sprinkles
